- 1 lb eggplant, cut into 1-inch pieces

- 1 white onion, chopped
- 2 garlic cloves, minced
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper, optional
- 1 cup canned white beans, rinsed
- 1/4 cup parsley, chopped
- 1 teaspoon fresh Sunkist® lemon zest
- 1 tablespoon fresh lemon juice
- 1 cup breadcrumbs, whole wheat, panko or regular
Lemon Sauce
- 1/4 cup cashews, soaked in hot water at least 1 hour
- 2 tablespoons fresh dill
- 1 tablespoon nutritional yeast
- 1/4 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons fresh lemon juice
