Poached Cara Cara Oranges

vanilla bean, split lengthwise and seeds removed

Sunkist® Cara Cara oranges

quart vanilla or coconut ice cream, for serving
Directions
- Start by supreming the Cara Cara oranges.
- Squeeze any excess juice from the remaining flesh into a small 2-3qt saucepan, along with the water, sugar, and salt.
- Set the pot over medium heat, stirring occasionally, until the sugar dissolves.
- Add the vanilla bean seeds and whisk a few times to combine. Add the pod and the supremed Cara Caras and gently mix one or twice to combine. Bring everything to a gentle simmer, without stirring, for 5-8 minutes.
- Remove the pan from heat and let cool to room temperature before transferring to a sealable container.
- The Cara Caras can be enjoyed once cooled or can be placed in the refrigerator for 2-3 hours (or until well-chilled).
- To serve, spoon the segmented oranges along with some of the syrup over a few scoops of ice cream and enjoy.
