Grapefruit Grain Salad

cup dry couscous

cup water

tsp sea salt

oz sugar peas, thinly sliced

oz feta cheese, plus extra for garnish

2 1/2
tbsp chopped mint, plus extra for garnish

supremed California Star Ruby grapefruits
Red Wine Vinaigrette

tbs red wine vinegar

1/2
tsp dijon mustard

1
garlic clove, minced
-
1/2
tsp agave
-

tbsp olive oil

Salt and pepper, to taste
Directions
Grapefruit Grain Salad
- Begin by preparing the couscous. Place the water and salt into a saucepan and set over medium heat. Once the water begins to boil, mix in the couscous, cover with a lid, and remove from heat.
- Let the couscous rest for 5 minutes, or until all the water has been absorbed. Remove the lid, and gently fluff with a fork. Let cool.
- To a large bowl add the cooled couscous, sugar peas, feta cheese, and mint. Drizzle the dressing over the top and toss together until everything is well coated.
- Add the grapefruit segments, and gently toss a few more times to incorporate. Garnish salad with a bit more mint and feta cheese and enjoy.
Red Wine Vinaigrette
- For the dressing, add the red wine vinegar, mustard, garlic, agave, and a pinch of salt and pepper to a small bowl. Whisk everything together to combine.
- While whisking, slowly pour in the olive oil. Continue whisking until all of the olive oil has been added. Taste, and add additional salt or pepper as needed.
