Using a small bowl, whisk together lemon and Sunkist<sup>®</sup> Cara Cara juice, maple syrup, mustard, and salt.
Slowly add the olive oil in a thin stream and continue to whisk until it emulsifies.
Using a sharp knife, slice off the top and bottom of each orange. You want the citrus to sit flat on your chopping board. Follow the curve of the fruit and cut the pith and peel off. Slice fruit crosswise into ¼-inch disks.
Transfer to a platter. Set aside.
Arrange Bibb lettuce, radicchio, and orange slices on a large platter, in layers. Scatter pomegranate arils and red onion on top.
Drizzle with vinaigrette and sprinkle with crushed pistachios.
