Season the chicken thighs with garlic powder, cayenne, paprika, ground coriander, and salt and pepper.
Add avocado oil and lime juice and marinate the chicken for 15 minutes to 1 hour.
Sear chicken thighs in a high-heat pan for 3-4 minutes on each side until browned.
Reduce the heat and continue to cook the chicken for 15-20 minutes until cooked through. Transfer cooked chicken to a plate.
To create the maple orange glaze, combine orange juice, maple syrup, brown sugar, white vinegar, soy sauce, garlic powder, arrowroot starch and water in a bowl or measuring cup.
In a pan, cook down minced garlic in a little bit of avocado oil.
Add the orange maple glaze to the heated pan with garlic. Add orange zest and fresh dill. Bring to a boil and simmer on medium heat until thick, for 3-4 minutes.
Add the chicken thighs back to the orange maple glaze and simmer for 1 more minute.
Serve with your sides of choice – we recommend serving it over Jasmine rice with steamed broccoli.
