Grapefruit Cardamom Muffins

Ingredients
- 2 large eggs
- 1 cup oil
- 1 cup milk
- 1 cup grapefruit juice
- Zest of 1/2 large grapefruit
- 1 tsp ground cardamom
- 1 cup Lakanto Coconut Sugar with Monk Fruit
- 1 cup plus 2 tbsp Lakanto Golden Allulose
- 1 cup Lakanto Maple Syrup, mixed into the batter
- 2 cups all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 to 3 tbsp Lakanto Maple Syrup, for brushing on top
Directions
- Preheat oven to 350F and prep a muffin tin.
- Whisk eggs, oil, milk, grapefruit juice, zest, cardamom, coconut sugar, allulose, and the 1/4 cup maple syrup together.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt.
- Fold dry ingredients into wet just until combined.
- Divide batter into muffin cups and bake 20 to 22 minutes.
- Brush warm muffins with the remaining Lakanto Maple Syrup right out of the oven.
