Frosted Orange Cranberry Cookies

Ingredients

  • 1 box white cake mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 3 tablespoons of fresh Sunkist® Navel orange juice
  • 1/2 cup dried cranberries
  • 1 Sunkist® Navel orange zest
  • 1 cup cream cheese frosting

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, mix together cake mix, eggs, oil, and orange juice until smooth. 
  3. Stir in the dried cranberries and orange zest. Using a large cookie scoop (about 3 tablespoons), portion the dough onto the prepared cookie sheet and bake for 12-15 minutes, or until lightly golden around the edges.
  4. Allow the cookies to cool on the baking sheet for 3-4 minutes before transferring to a wire rack.
  5. When cool, frost each cookie with about 1-2 tablespoons of cream cheese frosting. Top with more orange zest, if desired.
