Zucchini Fritters with Sunkist® Lemon Garlic Aioli

Ingredients

zucchini

package of instant noodles

1
stalk of green onions/scallions, finely diced.

cup flour

egg

tsp salt

cooking oil

Sunkist® grated lemon zest

1/2
Sunkist® tbsp lemon juice

tsp minced garlic

cup Japanese mayo
Directions
- Make the instant noodles as per package.
- While that's cooking, wash and shred the zucchini into a paper towel. Squeeze all the water out as much as possible. Place it back into a dry bowl.
- Drain noodles and pat it dry as much as you can. Place into same bowl as the zucchini. Using food scissors, roughly cut the noodles so they're not so long.
- To the same bowl, add in lemon juice, green onions, flour, egg and salt.
- Mix well.
- In a pan, heat up the cooking oil. Using your hands, grab a small handful of the mixture and flatten it with your palm. Cook in the pan until each side is golden.
- To make the dipping sauce: add Lemon zest, Lemon juice, and garlic mayo to a small bowl and mix well.
