Mandarin Glaze Salmon

Ingredients
- 4 salmon fillets
- Salt and black pepper, to taste
- 1 tbsp oil
- 1/2 cup freshly squeezed Sunkist® Mandarin Orange juice
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tsp grated ginger
- 1 tsp cornstarch mixed with 2 tsp water (slurry)
- 2 cups cooked white rice
- 2 cups steamed broccoli
- 2 tbsp chopped chives
Directions
- Season salmon fillets with salt and black pepper.
- Heat oil in a pan over medium heat and sear salmon for 3-4 minutes per side until golden and cooked through. Remove from pan.
- In the same pan, whisk together Sunkist® Mandarin Orange juice, honey, soy sauce, and ginger. Simmer for 2 minutes, then stir in the cornstarch slurry to thicken.
- Return salmon to the pan and spoon the glaze over the fillets, cooking for 1-2 more minutes until fully coated.
- Serve with white rice and steamed broccoli, garnished with chopped chives.
