Ingredients
- 1 (3.4 oz) box instant vanilla pudding mix
- 1/2 cup freshly squeezed Sunkist® Grapefruit juice
- 1/2 cup heavy cream
- 1 cup crushed graham crackers
- 2 tbsp melted butter
- 1 cup coconut cream
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/4 cup heavy whipping cream
- 1 Sunkist® Grapefruit, segmented and roughly chopped
- 1/2 cup toasted shredded coconut
Directions
- Make the grapefruit cream by whisking together the pudding mix, grapefruit juice, and heavy cream until thickened. Divide evenly into 4 serving cups.
- Prepare the graham layer by mixing crushed graham crackers with melted butter, then press over the grapefruit cream layer in each cup.
- Make the thick coconut cream layer by whipping coconut cream, powdered sugar, vanilla extract, and heavy whipping cream until thick and fluffy. Spoon over the graham cracker layer.
- Top with the chopped Sunkist® Grapefruit, arranging them evenly over the coconut layer.
