Citrus Pasta Salad

Sunkist® Navel or Valencia oranges, peeled and segmented

Sunkist® grapefruit, peeled and segmented

cup feta cheese

bunch mint leaves
Vinaigrette

Sunkist® lemons, zested

cup lemon juice

cup olive oil

pinch of salt
Directions
Citrus Pasta Salad
- Prepare pasta according to package directions. Drain thoroughly and set aside.
- Combine orzo, oranges, grapefruit, feta cheese, and mint leaves. Stir in vinaigrette (recipe below).
- Refrigerate for 10 minutes and serve.
Vinaigrette
- In a small bowl, whisk together olive oil, lemon zest, lemon juice and salt. Set aside.
