Custard Cream
- 4 1/2 tablespoons milk
- 1/4 teaspoon vanilla beans
- 4 teaspoons sugar
- 1 egg
- 1 teaspoon pastry flour
- 1 teaspoon cornstarch
- 1/4 teaspoon butter
- 1 splash brandy
- 1/2 tablespoon Sunkist lemon juice
- 1/2 tablespoon Sunkist lemon zest
Cream Cheese Topping
- 1 tablespoon cream cheese
- 2 1/2 tablespoon butter
- 6 tablespoon powdered sugar
- 1 pinch of salt
- 1/2 tablespoon freshly squeezed Sunkist lemon juice
- Fresh mint for garnish
- Dried lemon wedges for garnish
