Cara Cara Orange Chicken Meatballs

Ingredients
- 1 lb ground chicken
- 1/3 cup panko breadcrumbs
- 1 egg
- 2 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1 tbsp oil
- 1/2 cup freshly squeezed Sunkist® Cara Cara Orange juice
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
- 2 cups steamed white rice
- 2 cups steamed broccoli
- 1 tsp Sunkist® Cara Cara Orange zest
- 2 tbsp green onions, chopped
- 1 tsp sesame seeds
Directions
- Make the meatballs by combining ground chicken, panko, egg, soy sauce, garlic powder, and ginger powder in a bowl. Mix well and roll into small meatballs.
- Heat oil in a pan over medium heat and cook the meatballs for 8-10 minutes, turning occasionally until golden and cooked through. Remove from pan.
- Make the sauce in the same pan by combining Sunkist® Cara Cara Orange juice, honey, and rice vinegar. Bring to a simmer, then stir in the cornstarch slurry to thicken.
- Return the meatballs to the pan, tossing to coat in the sauce. Cook for another 2 minutes until glazed.
- Serve over white rice with steamed broccoli and garnish with Sunkist® Cara Cara Orange zest, green onions, and sesame seeds.
