Strawberry Shortcake with Blood Orange

Ingredients

  • 1 can refrigerated biscuit dough
  • 2 tablespoons butter, melted
  • 2 tablespoons sugar
  • powdered sugar, strawberries and blood orange slices - for garnish
  • 3 Sunkist® Blood Oranges, segmented
  • 2 cups Naturipe® Strawberries, sliced
  • 3 tablespoon sugar
  • 1/2 teaspoon vanilla paste or vanilla extract
  • 1 cup heavy whipping cream
  • 3 tablespoon powdered sugar

Directions

  1. Preheat oven to 375F.
  2. Place segmented oranges and strawberries in a bowl. Sprinkle with sugar and vanilla, mix and set aside.
  3. Place biscuits on a baking sheet a few inches apart from each other and bake 13-15 minutes.
  4. Brush biscuits with butter while warm and sprinkle with sugar.
  5. For the whipped cream, add the heavy whipping cream and powdered sugar into a large chilled bowl and whip until fluffy.
  6. For strawberry whipped cream, puree 1 strawberry and slowly mix it into the whipped cream.
  7. To assemble shortcakes: slice biscuits in half. Add blood orange and strawberry filling to bottom biscuit. Top with whipped cream. Add top biscuit and place a dollop of whipped cream on top.
  8. Garnish with more blood oranges and strawberry filling.
