Sunkist® Lemon Ricotta Pasta

Ingredients

  • 1 lb short pasta of choice
  • 1 cup ricotta 
  • 2 tbsp Sunkist<sup>®</sup> lemon juice 
  • 2 tsp zest from a Sunkist<sup>®</sup> lemon
  • 3/4 cup Parmesan 
  • 2 tsp garlic, minced
  • 1/2 cup arugula 
  • 1/2 tsp red pepper flakes 
  • 1 tsp salt
  • 1/2 tsp pepper 
  • 1/2 cup reserved pasta water

Directions

  1. Add water to a large pot and bring to a boil. Add a large pinch of salt and pasta and cook 1 minute less than package instructions.
  2. Drain pasta and reserve 1/2 cup of pasta water.
  3. Reduce heat to low. In the same pot, add ricotta, Sunkist<sup>®</sup> lemon juice and zest, parmesan, minced garlic, red pepper flakes, salt and pepper.
  4. Add the pasta back in along with reserved pasta water and arugula. Stir until combined.
  5. Serve and top with a bit of lemon zest and a sprinkle of parmesan.
