Pummelo Brûlée

Ingredients

  • 2 Sunkist® pummelos, halved
  • 1/2 cup granulated sugar
  • 2 Dollops Greek yogurt for topping (optional)

Directions

  1. Preheat broiler on high.
  2. Trim a small amount of peel from the bottoms of each pummelo half to stabilize the fruit. Place halved Sunkist® pummelos on baking sheet cut side up. Cover the exposed pummelo flesh with a thin, even layer of sugar – 2 tablespoons per half using more as needed to cover the flesh.
  3. Place under broiler until sugar has bubbled and caramelized – this should take about 5 minutes but keep a close watch as it can burn very quickly.
  4. Remove from oven and allow to cool for 10 minutes before serving.
  5. Add a dollop of yogurt if desired.
