Potato Fritters with Sunkist® Lemon Yogurt Sauce

Ingredients
Fritters

2 pounds Yukon Gold potatoes, peeled and coarsely shredded on a box grater

2 medium shallots, thinly sliced

2 large eggs, beaten

1/4 cup all-purpose flour

1/2 Sunkist® lemon, squeezed
-
1 tsp Greek spices
-
Salt and Pepper

2 tbsp vegetable oil, for frying
Sunkist® Lemon Yogurt Sauce
-
1 1/2 cups plain Greek yogurt
-
2 tbsp fresh Sunkist® lemon juice or 1 Sunkist® lemon, squeezed
-
1 tsp Sunkist® lemon zest
-
1 garlic clove, pressed
-
1 tsp cumin
-
Sea salt
-
2 tsp freshly chopped dill
Directions
- In a bowl, whisk together the yogurt, Sunkist® lemon juice, Sunkist® lemon zest, garlic, cumin, salt and dill in a small bowl and aside.
- Grate the Yukon Gold potatoes and place them in a cloth. Squeeze out the liquid.
- Add shallots, eggs flour, lemon, spices, salt and pepper.
- Combine and form small patties and place in an oiled pan. Flip when golden. <br />
- Add some zest as well as an extra squeeze of lemon for a final touch. Then, you’re ready to serve!
