Navel Orange Upside Down Cake

Ingredients
- 4 Sunkist® Navel oranges
- 1 1/2 tablespoons of butter, melted
- 3 tablespoons of brown sugar
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1 3/4 cups all-purpose flour
- 1 package of instant vanilla pudding mix
- 1 cup milk
- 1/3 extra-virgin olive oil
- 1 cup cane sugar
- 2 teaspoons vanilla extract
Directions
- Peel (or don’t) Sunkist® Navel oranges and slice into ⅛ inch rounds.
- Preheat oven to 350 degrees fahrenheit.
- Whisk together flour, baking powder, salt, and pudding mix in a bowl.
- In a separate bowl, whisk together milk, oil, vanilla, sugar, until well combined.
- Pour wet ingredients into dry ingredients and mix until combined. Set aside.
- Line pan with parchment paper, and top with melted butter to cover the bottom.
- Sprinkle brown sugar evenly over the bottom of the pan, and align oranges in a circular pattern until the bottom of the pan is covered.
- Pour batter over the Sunkist® Navel oranges and spread without moving the slices too much.
- Bake 35-45 minutes or until the cake is set (toothpick should come out clean).
- Allow to cool, slice and enjoy!
