Lemony Roasted Potatoes

Ingredients

  • 1 1/2 pounds large yellow potatoes
  • 1 1/4 cup olive oil
  • 1/2 cup freshly squeezed Sunkist® lemon juice (about 2 lemons)
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper

Directions

  1. Preheat oven to 425°F.
  2. Cut potatoes into wedges and toss in a large bowl along with olive oil, half of the freshly squeezed Sunkist® lemon juice, salt and pepper; toss to coat potatoes evenly.<br />
  3. Spread potatoes out in a baking dish and drizzle with any oil and seasonings left in the bowl.<br />
  4. Roast in preheated oven for 40 – 45 minutes, until potatoes are tender and golden.<br />
  5. Remove from oven and drizzle with remaining freshly squeezed lemon juice and sprinkle with freshly grated zest before serving. <br />
