cup freshly squeezed Sunkist® lemon juice (about 2 lemons)

Directions
- Preheat oven to 425°F.
- Cut potatoes into wedges and toss in a large bowl along with olive oil, half of the freshly squeezed Sunkist® lemon juice, salt and pepper; toss to coat potatoes evenly.<br />
- Spread potatoes out in a baking dish and drizzle with any oil and seasonings left in the bowl.<br />
- Roast in preheated oven for 40 – 45 minutes, until potatoes are tender and golden.<br />
- Remove from oven and drizzle with remaining freshly squeezed lemon juice and sprinkle with freshly grated zest before serving. <br />
