Meyer Lemon Pie Chia Pudding Cups

Ingredients

Chia Pudding

  • 1/3 cup chia seeds
  • 2 cups vanilla almond milk (or coconut milk)
  • 4 tbsp. maple syrup

Pie Filling

  • 3 Sunkist® Meyer lemons, peeled
  • 4 tbsp. coconut sugar (low glycemic, unrefined)
  • 2 tbsp. maple syrup

Directions

Chia Pudding

  1. Mix Chia Pudding ingredients in a bowl and leave in fridge for 2 hours, or overnight.

Pie Filling

  1. Mix Pie Filling ingredients in a small bowl, and over medium heat on stovetop, bring to a light simmer. The heat will pull out the flavors of the Meyer lemon, and some of the bitterness. Leave on heat for 3-5 minutes.
  2. Layer your Meyer lemon “pie filling” on top of your chilled chia base and enjoy!
