Ingredients
Lemon Pasta Salad
- 1 pound pasta of choice
- 1 cup of cucumber, diced
- 1/2 cup Kalamata olives, cut in half
- 1 bell pepper, sliced
- 1 15oz can chickpeas, drained and rinsed
- 1/2 cup of mozzarella cheese, shredded
- 1/4 cup of fresh parsley, chopped
Vinaigrette
- 2 Sunkist® lemons, for juice and zest
- 1/2 cup of fresh Sunkist® lemon juice
- 1/3 cup of olive oil
- 1 pinch of salt
