Grapefruit Honey Iced Tea

Ingredients
Iced Tea
- 6 black tea bags, any tags or threads snipped as much as possible
- 2 Sunkist® grapefruits; juiced
- 1 batch Spiced Grapefruit Honey Syrup, adding gradually if preferred to check sweetness level
- 1 handful fresh mint leaves
- 1 Sunkist® grapefruit, sliced into rounds for garnish and serving
- 1 bunch fresh mint sprigs, for garnish and serving
Spiced Grapefruit Honey Syrup
- 1 cup turbinado sugar
- 1 cup water
- 1/4 cup honey
- 1/2 teaspoon pure vanilla extract
- 2 (2 x 4 inch) Sunkist® grapefruit peels
- 1 cinnamon stick
- 1 star anise
- Pinch ground cardamom (less than ⅛ teaspoon)
Sunkist® Grapefruit ice cubes
- 3 Sunkist® Grapefruit wedges, halved
- 6 fresh mint leaves
- 1 tablespoon honey, divided
Directions
Iced Tea
- Bring 8 cups water to a simmer. Remove from heat. Add tea bags. Steep 4-6 minutes, until it’s the strength you like. Remove from heat. Discard tea bags. Add Sunkist® grapefruit juice and Spiced Grapefruit Honey Syrup. Allow to cool completely to room temperature on stovetop.
- Transfer cooled tea to a large pitcher. Add mint leaves. Stir to combine. Refrigerate to chill overnight, or at least 4 hours.
- To serve, place a grapefruit cube in each glass. Top with chilled Grapefruit Honey Iced Tea. Garnish each with a fresh mint sprig. Serve immediately.
Spiced Grapefruit Honey Syrup
- Add turbinado sugar, water, honey, vanilla extract, Sunkist® grapefruit rinds, cinnamon stick, star anise, and cardamom to a small skillet. Bring to a boil, then immediately reduce heat to low and simmer until the sugar has completely dissolved, about 5 minutes, stirring periodically.
- Once dissolved, remove from heat and allow the syrup to sit for 15 minutes. Remove grapefruit peels and transfer the syrup to a Mason jar or airtight container, leaving the cinnamon stick in the jar. You can make this ahead of time. Chill until ready to use.
Sunkist® Grapefruit ice cubes
- Place 1 Sunkist® grapefruit wedge and 1 mint leaf in each section of a 6-cube jumbo ice cube tray. Top each section with water until nearly full. Place ice tray on a flat surface in the freezer overnight, or until entirely frozen.
