Grapefruit Ceviche

Ingredients
- 2 Sunkist® Grapefruits, halved
- 1/2 lb raw shrimp, whole, peeled, deveined, tail on
- 1/2 cup lime juice
- 1/4 cup red onion, finely diced
- 1/4 cup cucumber, diced
- 1/2 avocado, diced
- 1 small jalapeño, finely chopped
- 2 tbsp cilantro, chopped
- Salt and black pepper, to taste
Directions
- Cut around the Sunkist® Grapefruit halves and carefully scoop out the flesh, keeping the shells intact to use as bowls. Chop the grapefruit flesh into small pieces.
- In a bowl, combine raw shrimp and lime juice. Let it marinate in the fridge for 30 minutes until the shrimp turns opaque and "cooks" in the citrus juice.
- Gently mix in the grapefruit pieces, red onion, cucumber, avocado, jalapeño, and cilantro. Season with salt and black pepper.
- Let the flavors meld together for an extra 5-10 minutes before serving for enhanced taste.
- Spoon the ceviche into the hollowed-out Sunkist® Grapefruit shells and serve immediately.
