Creamy Grapefruit Slaw

tablespoons Sunkist® California Star Ruby grapefruit juice

large Sunkist® California Star Ruby grapefruit, supremed

small shallot, minced

tablespoon olive oil

tablespoons plain whole milk Greek or Skyr yogurt

teaspoon Dijon mustard

teaspoon sugar

1/2
medium cabbage head, cored and shredded

avocado, diced into 1/2-inch pieces

Salt and pepper, to taste
Directions
- In a large mixing bowl, combine minced shallot and grapefruit juice. Set aside for 10 minutes.
- Whisk in olive oil, Greek yogurt, mustard and sugar.
- Season with salt and pepper.
- Add shredded cabbage, supremed grapefruit, avocado and dressing. Toss gently to combine.
- Serve as a side dish with salmon, shrimp or grilled chicken.
