Blood Orange Breakfast Loaf

Ingredients
Loaf

cup butter, room temperature

cup granulated sugar

large eggs

1 1/2
cups Sunkist® Blood orange juice (about 2 Blood oranges)

cups all purpose flour

teaspoons baking powder

teaspoon salt
Glaze

1 1/2
cup powdered sugar

tablespoons Sunkist® Blood orange juice
-
1
teaspoon Sunkist® Blood orange zest

1
teaspoon melted butter
-
Pinch of salt
Directions
Loaf
- In a bowl, combine all purpose flour, baking powder, and salt. Mix well and set aside.
- In another bowl, add the butter and sugar and mix until fluffy.
- Add one egg at a time and mix until combined.
- Scrape down the bowl. Add the orange juice and mix.
- In small increments, add the dry ingredients while gently mixing with a spatula.
- In a 9x5 loaf pan, line with parchment paper and pour in the batter.
- Smooth it out and bake at 350 degrees F for 40-45 minutes or until it’s golden brown and comes out clean with toothpick.
- Let the cake cool completely. While loaf is cooling make the glaze.
Glaze
- In a bowl, combine powdered sugar, Blood orange juice & zest, melted butter, pinch of salt and mix until smooth.
- After the cake is completely cooled, place the cake on an icing rack over a baking sheet and pour the glaze over the cake.
- Decorate with thinly Blood orange slices and let the glaze harden for about 10 minutes.
