Blood Orange Breakfast Loaf

Ingredients

Loaf

  • 1/2 cup butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups Sunkist® Blood orange juice (about 2 Blood oranges)
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Glaze

  • 1 1/2 cup powdered sugar
  • 2 tablespoons Sunkist® Blood orange juice
  • 1 teaspoon Sunkist® Blood orange zest
  • 1 teaspoon melted butter
  • Pinch of salt

Directions

Loaf

  1. In a bowl, combine all purpose flour, baking powder, and salt. Mix well and set aside.
  2. In another bowl, add the butter and sugar and mix until fluffy.
  3. Add one egg at a time and mix until combined.
  4. Scrape down the bowl. Add the orange juice and mix.
  5. In small increments, add the dry ingredients while gently mixing with a spatula.
  6. In a 9x5 loaf pan, line with parchment paper and pour in the batter.
  7. Smooth it out and bake at 350 degrees F for 40-45 minutes or until it’s golden brown and comes out clean with toothpick.
  8. Let the cake cool completely. While loaf is cooling make the glaze.

Glaze

  1. In a bowl, combine powdered sugar, Blood orange juice & zest, melted butter, pinch of salt and mix until smooth.
  2. After the cake is completely cooled, place the cake on an icing rack over a baking sheet and pour the glaze over the cake.
  3. Decorate with thinly Blood orange slices and let the glaze harden for about 10 minutes.
