Ahi Tuna Tacos with Grapefruit Salsa

Ingredients

  • 1 pound ahi tuna fish
  • 1 cup of mayonnaise
  • 2 tablespoons salt
  • 1 tablespoon pepper
  • 2 tablespoons of chili oil
  • 1/2 cup of vegetable oil
  • 4 corn tortillas

Chili Oil

  • 1 cup of dried arbol chilis
  • 1/2 cup of vegetable oil

Grapefruit Salsa

  • 2 Sunkist® grapefruits, segmented
  • 1 red onion, thinly sliced
  • 1/2 bunch of cilantro, chopped
  • Salt to taste

Directions

  1. Season the ahi tuna with salt and pepper.
  2. Sear the ahi tuna in a hot pan with vegetable oil for one minute on each side.
  3. In a bowl, add mayonnaise and chili oil sauce (recipe below). Mix well with a spoon to create the spicy aioli sauce.
  4. Heat corn tortilla in a hot pan.
  5. Slice ahi tuna and add it to the warmed corn tortilla.
  6. Drizzle the spicy aioli sauce over the ahi tuna taco and top with the Sunkist® grapefruit salsa (recipe below).

Chili Oil

  1. Add dried arbol chilies with vegetable oil in a blender or food processor.
  2. Blend until chilies are finely chopped.
  3. Drizzle on top of tacos.

Grapefruit Salsa

  1. Segment Sunkist® grapefruit.
  2. In a bowl, mix the Sunkist® grapefruit segments, red onion, and cilantro. Season with salt to taste.
  3. Mix to create a salsa.
