Sunkist Orange Chicken

500g boneless, skinless chicken thigh, cubed.

Cornstarch slurry (2 tsp cornstarch + 2 tsp water)

Sauce

tsp minced garlic

tsp minced ginger

tsp chilli flakes

tbsp brown sugar

tbsp light soy sauce

tbsp rice vinegar

pcs Sunkist Navel Orange
Garnish

stalk spring onions, finely chopped

Directions
- Cube boneless, skinless chicken thighs.
- Batter cubed chicken thighs in 3-step batter. First, a thin coat of plain flour, followed by egg and then into seasoned flour.
- Deep fry chicken at medium low heat for 3-4 minutes.
- Take chicken out, allow it to rest for 2 minutes.
- Deep fry chicken again at high heat for 1 minute.
- Juice 1 whole Sunkist Navel Orange.
- Stir-fry garlic, ginger and chilli flakes in 1 tbsp of canola oil until fragrant.
- Add orange juice, 2 tsp sugar, 1 tbsp brown sugar, ½ tbsp light soy sauce and 2 tbsp rice vinegar, mix until thoroughly combined and then simmer for 2 minutes.
- Thicken sauce with cornstarch slurry.
- Add crispy chicken back in, toss and coat with sauce.
- Garnish with spring onions and sesame seeds.
- Serve with warm white rice.
