Steamed Orange Cake (Kueh)

Ingredients

250g self-raising flour

250g juice of Sunkist USA Navel oranges

100g granulated sugar

70g sunflower oil
-
1 tbsp zest of Sunkist USA Navel orange

Some orange palm sugar to serve
Directions
- Bring water to a boil in the steamer.
- Pour freshly squeezed Sunkist Orange juice through a sieve to remove any pulp.
- Sift self-raising flour into a mixing bowl. Add orange juice, sugar, oil to flour. Stir with a hand whisk to combine.
- Add orange zest, fold well with a spatula.
- Fill batter evenly into cupcake liners up to about 0.5 cm from the brim. You may use 2 layers of cupcake liners to prevent “bursting”.
- Place cupcakes into steamer with about 5 cm apart, and steam over high heat for 15 minutes.
- Remove cupcakes from steamer and leave on cooling rack to cool down completely before serving with orange palm sugar.
