Steamed Orange Cake (Kueh)

Ingredients

  • 250g self-raising flour
  • 250g juice of Sunkist USA Navel oranges
  • 100g granulated sugar
  • 70g sunflower oil
  • 1 tbsp zest of Sunkist USA Navel orange
  • Some orange palm sugar to serve

Directions

  1. Bring water to a boil in the steamer.
  2. Pour freshly squeezed Sunkist Orange juice through a sieve to remove any pulp.
  3. Sift self-raising flour into a mixing bowl. Add orange juice, sugar, oil to flour. Stir with a hand whisk to combine.
  4. Add orange zest, fold well with a spatula.
  5. Fill batter evenly into cupcake liners up to about 0.5 cm from the brim. You may use 2 layers of cupcake liners to prevent “bursting”.
  6. Place cupcakes into steamer with about 5 cm apart, and steam over high heat for 15 minutes.
  7. Remove cupcakes from steamer and leave on cooling rack to cool down completely before serving with orange palm sugar.
