Orange Miso Noodle Salad

tbsp Rice wine vinegar or mirin

g Extra firm tofu (+ 2 tsp soy sauce)

Olive oil for airfrying

cup Purple cabbage

cup Edamame

cup Red bell pepper

Directions
- Chop vegetables - slice purple cabbage, red bell peppers thinly. Steam edamame for 2-3 minutes if you’re using frozen.
- Cube extra firm tofu and drizzle some olive oil. Air fry for 10 minutes. Add a splash of soy sauce at the halfway mark and give the tofu a good toss. Continue airfrying.
- Boil the noodles of your choice according to package instructions. Drain and keep the noodle water.
- Squeeze orange into the meal prep jar. ½ an orange would give about 3 tablespoons of fresh orange juice.
- Add miso, light soy sauce, mirin, sesame oil and unsweetened peanut butter. Add ⅓ cup noodle water and give it a good whisk.
- Add in air fried tofu, purple cabbage, red bell peppers, edamame and cooked noodles.
- Serve them cold, like a noodle salad or add 1 cup of hot water to have orange miso ramen.
