Vegan Chocolate Pudding with Blood Oranges

ingredients
- 2.75 cups Almond Milk
- 0.25 cup Brown Sugar
- 0.5 teaspoon Vanilla extract
- Pinch of Sea salt
- 1.25 cups Soft tofu
- 1.5 cups 70% Complexite Guittard Chocolate, chopped
- 3.5 Sunkist Blood oranges
PREP TIME
preparation: Overnight
Cooking: 15 minutes
Directions
- In a pot, combine almond milk, brown sugar, and vanilla. Bring to a boil. Remove from heat.
- In a blender, combine salt, tofu, and chocolate. Pour hot almond milk mixture over items in blender. Blend on low until smooth. Pour into desired serving cups. Allow to chill and set overnight in the refrigerator.
- Segment Blood oranges. Place segments on top of pudding prior to serving.
