  • 1 (3.4 oz) box instant vanilla pudding mix
  • .5 cup freshly squeezed Sunkist® Grapefruit juice
  • .5 cup heavy cream
  • 1 cup crushed graham crackers
  • 2 tbsp melted butter
  • 1 cup coconut cream
  • .25 cup powdered sugar
  • .5 tsp vanilla extract
  • .25 cup heavy whipping cream
  • 1 Sunkist® Grapefruit, segmented and roughly chopped
  • .5 cup toasted shredded coconut

Grapefruit Coconut Pie Cups

Directions

  1. Make the grapefruit cream by whisking together the pudding mix, grapefruit juice, and heavy cream until thickened. Divide evenly into 4 serving cups.
  2. Prepare the graham layer by mixing crushed graham crackers with melted butter, then press over the grapefruit cream layer in each cup.
  3. Make the thick coconut cream layer by whipping coconut cream, powdered sugar, vanilla extract, and heavy whipping cream until thick and fluffy. Spoon over the graham cracker layer.
  4. Top with the chopped Sunkist® Grapefruit, arranging them evenly over the coconut layer.
