  • 2 Sunkist® Grapefruits, halved
  • .5 lb raw shrimp, whole, peeled, deveined, tail on
  • .5 cup lime juice
  • .25 cup red onion, finely diced
  • .25 cup cucumber, diced
  • .5 avocado, diced
  • 1 small jalapeño, finely chopped
  • 2 tbsp cilantro, chopped
  • Salt and black pepper, to taste

Directions

  1. Cut around the Sunkist® Grapefruit halves and carefully scoop out the flesh, keeping the shells intact to use as bowls. Chop the grapefruit flesh into small pieces.
  2. In a bowl, combine raw shrimp and lime juice. Let it marinate in the fridge for 30 minutes until the shrimp turns opaque and "cooks" in the citrus juice.
  3. Gently mix in the grapefruit pieces, red onion, cucumber, avocado, jalapeño, and cilantro. Season with salt and black pepper.
  4. Let the flavors meld together for an extra 5-10 minutes before serving for enhanced taste.
  5. Spoon the ceviche into the hollowed-out Sunkist® Grapefruit shells and serve immediately.
