  • 1 lb ground chicken
  • .333 cup panko breadcrumbs
  • 1 egg
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 1 tbsp oil
  • .5 cup freshly squeezed Sunkist® Cara Cara Orange juice
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 2 cups steamed white rice
  • 2 cups steamed broccoli
  • 1 tsp Sunkist® Cara Cara Orange zest
  • 2 tbsp green onions, chopped
  • 1 tsp sesame seeds

Cara Cara Orange Chicken Meatballs

Directions

  1. Make the meatballs by combining ground chicken, panko, egg, soy sauce, garlic powder, and ginger powder in a bowl. Mix well and roll into small meatballs.
  2. Heat oil in a pan over medium heat and cook the meatballs for 8-10 minutes, turning occasionally until golden and cooked through. Remove from pan.
  3. Make the sauce in the same pan by combining Sunkist® Cara Cara Orange juice, honey, and rice vinegar. Bring to a simmer, then stir in the cornstarch slurry to thicken.
  4. Return the meatballs to the pan, tossing to coat in the sauce. Cook for another 2 minutes until glazed.
  5. Serve over white rice with steamed broccoli and garnish with Sunkist® Cara Cara Orange zest, green onions, and sesame seeds.
