Fresh Green Salads

Ingredients
Salad

cups loosely packed mixed greens lettuce

cup or 2-3 endives, sliced

cup or 1/2 small radicchio, sliced

Sunkist<sup>®</sup> Navel Orange, segmented

stalk fennel, thinly sliced

1
avocado, cubed

1/4
cup finely grated sharp white cheddar cheese
Dressing
-
1/4
cup fresh Sunkist<sup>®</sup> lemon juice
-
1/4
cup fresh Sunkist<sup>®</sup> Navel Orange juice
-
1
tbsp. dijon mustard
-
2
tbsp. honey
-
1/3
cup extra virgin olive oil
-
Salt and pepper to taste
Directions
Salad
- Assemble salad by adding greens, endives, radicchio, fennel and avocado onto a platter.
- Segment Sunkist Navel orange and Sunkist mandarin and add to platter.
- Serve dressing with salad or toss and serve immediately. Garnish with cheese.
Dressing
- Pour Sunkist lemon juice, Sunkist Navel orange juice, mustard, honey and olive oil into a mason jar and shake. Season with salt and pepper to taste.
